The Texas A&M AgriLife Extension Service Office in McLennan County will host a Taste of the Mediterranean diet cooking class June 9 in Waco. The cost of the class is $25. Registration is available in person at the AgriLife Extension office for McLennan County, 4224 Cobbs Drive, Waco, or by calling 254-757-5180. Space is limited and the deadline to register is June 5. The Mediterranean diet is a way of eating and preparing foods in the U. S. based on traditions from Italy, Greece and other countries that border the Mediterranean Sea. Plant-based foods including whole grains, vegetables, legumes, fruits and nuts, herbs and spices are the foundation of the diet. Fish, dairy, poultry and seafood are all eaten in moderation, and olive oil is a main source of fat in this type of diet. Rachel Esquivel, AgriLife Extension family and community health agent for McLennan County, will teach the class.
