Take your cake decorating skills to the next level in this exciting 6-week intermediate course designed for students who already know the basics of baking and simple decorating techniques.
Join Keisha Kelly of The Cottage in the Woods Bakery for a hands-on experience focused on refining your technique, building confidence, and creating more polished, professional-looking cakes. Throughout the course, Keisha will share her favorite tips, tricks, and industry techniques to help you elevate your decorating style and expand your creative skillset.
Students will explore advanced decorating methods, cleaner finishes, elevated piping techniques, and creative design elements that transform simple cakes into stunning centerpiece creations perfect for birthdays, holidays, weddings, and special events.
Students will be responsible for baking their own cakes and providing their own decorating materials. Please see below for the tools needed each week.
Week 1: *Small cake and icing provided
Tools: Comb set, Decorating kit (turntable, spatulas, bags, tips), notetaking supplies, apron, handtowel or paper towels, wet wipes, ziploc bag for dirty tools
What we'll Learn:
- Refresher on frosting and smoothing a cake; highlight on crisper edges and extra smooth sides
- Creating stripes in different colors in buttercream icing using a comb
- Ombre and/or Marble frosting using an acrylic smoother
- Refresher on color theory
Students decorate their cake using frosting techniques
Week 2: Buttercream Piping Level Up!
Tools: Decorating Kit (tips, bags, spatulas, small smoothers), Russian tip set, Star tip 22 or kit star tips, Basketweave tip 48 (Hobby Lobby or Michael's), Petal tips 101 and 104, Round tip 1, Flower nail, Practice icing, plastic sheet covers, clean up supplies
What We'll Learn:
- Russian tip design (how to bag, pressure control for tips)
- Basketweave design
- Border refresher; new border Rope Border
- 5 petal flowers: Apple Blossom, Forget-me-not, Wild Rose
- Includes refresher on pressure control, angle, hand position, using a flower nail
Week 3: Royal Icing Fundamentals
Tools: Decorating Kit and all tips, bags and smoothers, flower nail, Wilton pre-made royal icing, 2" parchment squares, Star tip 14, Round tip 5, plastic cups or small mixing bowls, gel food color
