Most of us eat flour based foods every day, but we've lost touch with where it comes from. Join us for an immersive class that follows the journey of flour from regenerative farm to table. We'll explore how the Industrial Revolution's shift to roller milling traded nutrition and flavor for shelf-life and consistency. See a live demo of stone milling in action, learn about regenerative agricultural practices and why they matter, and see, touch and TASTE the difference between different varieties of wheat and corn.
About the teacher:
Local Millers was created from a love of better grains and a desire to share them with others. Joe and Doris Bozzi opened the mill (located at the Brandt Family Farm in Carroll, Ohio) in 2023 with the help of their daughter Isabella. The family mills and distributes flour, cornmeal, and grits throughout Central Ohio and ship all over the US. Along the way they connected with likeminded farmers who partnered with them to build something special. Together, they are preserving and promoting diverse, flavorful varieties of wheat and corn and bringing back the lost technique of stone-milling- reclaiming what modern milling lost.
