Many cool season crops like leafy greens and root vegetables thrive in cooler temperatures and can be planted several weeks before the last spring frost or in late summer for a fall harvest. Prepare your soil by adding compost and ensure it's not too wet, then sow seeds directly or start larger transplants indoors for a successful harvest. Cool-season vegetables thrive in temperatures between 40°F and 70°F and can often withstand light frosts.
